Overnight Carrot Bircher Muesli

I love carrot juice and a good bircher muesli, so I had to try this and it turned out very delicious that I want to share it with all of you. Prepare the night before and enjoy the next morning – a very healthy and nutritious way to start your day.

For 2 portions you’ll need:

80 g of rolled oats
100 ml of carrot juice
100 ml of almond milk
150 g of almond yogurt
1 teaspoon of cinnamon
A small handful of raisins
Dried dates
Raw honey
Almonds

Follow these easy steps:

The night before, put the oats into a bowl or container and pour over the carrot juice. Chop the dates into small pieces. Add the almond milk, almond yogurt, cinnamon, raisins and dates. Mix well (add more almond milk if you prefer it more liquid and less thick) and then cover to store it in the fridge overnight.

The next morning: take it out of the fridge and mix well again. Sprinkle over some almonds and honey. Add any fresh fruit you like – grated apple and / or fresh blueberries are great with it.

This bircher muesli gets a lovely colour thanks to the carrot juice and is simply delicious. This overnight recipe is not only quick, easy and healthy (no added sugar) but also brings another benefit – raw oats that are soaked for a longer time are much easier to digest than raw or cooked oats (i.e porridge).
