Red Yellow Lentil Dhal

I call it Red Yellow Lentil Dhal as I use red lentils but the dhal will turn completely yellow because of the turmeric in this recipe. It’s personally one of my favourite dishes especially during winter as it got so much flavour, heat and good ingredients.

Ingredients you need:

500 g of red lentils
2 teaspoons of coconut oil
1 tablespoon of fresh ginger
1 teaspoon of red chili flakes
2 teaspoons of cumin
2 teaspoons of Indian curry
3 teaspoons of turmeric
1,5 teaspoons of cinnamon
400 ml of coconut milk
500 ml of water (depending on how liquid / thick you prefer your dhal)
Fresh coriander
Salt
Lemon juice

Follow the steps below for your lentil dhal:

Rinse the red lentils before you start.

Use a large enough pot and start with heating up the coconut oil.

Add the fresh ginger followed by the cumin, curry, turmeric and cinnamon. Stir the spices on medium heat for one to two minutes.

Add the lentils and keep stiring for a bit. Then add a good amount of water. The lentils need to cook 15 – 20 minutes. Add more water if you feel all the water has been soaked up by the lentils.

Towards the end of the cooking time of the lentils add the coconut milk as well as chili flakes and lemon juice.

Finally add salt to taste as well as fresh coriander.

The dhal is perfect with jasmine or brown rice. I love it with spelt if you like to try something a bit different.

Optional: I like to add pumpkin during season which gives additional texture and sweetness to the dhal.
